The Travel Café, one of my favorite shows on the Travel Channel, did an episode in Hong Kong where oddly enough it featured a Vietnamese Brit living in Hong Kong. She had a small, but fancy and popular restaurant. She revealed her secret recipe for nuoc mam: She replaces the vinegar with fresh squeezed orange juice. I've yet to try this... Generally, I like the kind with copious amounts of chopped garlic. biggthumpup.gif

Post your secret recipes here, in a format like below:

10 min 5 min prep

1 cup water
4 tablespoons rice vinegar
4 tablespoons sugar
5 tablespoons fish sauce
1 tablespoon garlic, finely chopped
2 small fresh chili peppers


1. Boil water with vinegar and sugar; allow it to cool.
2. Combine garlic, peppers, and add mixture.
3. Stir in the fish sauce.

I thought it was a cooking segment vid from some show from the Food Network.

Globetrekker, certainly my favorite show on the TV period, which also airs on the Travel Channel, did an episode in Vietnam. The host of this particular episode was that goofy but lovable blonde chick, Megan McCormick. Anyway, after few days of travelling from the south to the north, she said, as they were filming another food segment, that nuoc mam was quickly replacing ketchup as her favorite condiment. That's saying a lot coming from an American. (This episode re-airs every 2-3 months. Such is cable programming...)

This episode was in 1998 or 1999, something like that. She was really brave to try that snake wine.
