We're probably talking about different terminologies here.
Central vietnamese don't even have the word "bánh giò", we call it something else.
Is the term "bánh giò" the same for both north and south?

Southern Vietnamese confuse hỏi tone and ngã tone in general, not just Southwest people

But I guess people in Saigon don't make as many mistakes in spelling as those in rural provinces.
Speaking of which, I once went to this Vietnamese store in Little Saigon (in America) and bought some cakes. On the label of the cake is written "nhưng dừa"...and I was like "WTH" Don't they mean "nhân dừa"? How could they make such horrible mistake? Nhân is stuffing and nhưng is but.
Then I thought about it and I realized some Southerners do pronounce nhân like nhưng, including my family (not all the times but sometimes)

We also pronounce chân like chưng. But we (my family at least) do make a clear distinction between cân and cưng.

In the North, they don't have gỏi cuốn

They got phở cuốn and other fresh rolls but no gỏi cuốn as Southern Vietnamese know of. When you ask them about gỏi cuốn, they think you're talking about "gỏi" (like gỏi gà, gỏi măng, gỏi vịt) in a roll and they said you're not supposed to eat gỏi like that.
They don't have cơm tấm here either (screw whoever said Northerners have cơm tấm)

I didn't read your discussion with freeters.
I knew because among the border provinces, Quảng Ninh is the only relatively urbanized one where internet is widely accessible to teens. Plus you keep talking about ethnic Jing in China and how you live near them.
Also, consider this
Lai Châu and Lào Cai are too remote.
Hà Giang, Cao Bằng, Lạng Sơn all have a high percentage of ethnic minorities and you're not too fond of ethnic minorities, you're pretty Kinh-centric. Hence you can't be from these provinces.
You must be from a province filled with ethnic Kinh --> Among the border procines, Quảng Ninh has ~ 90% ethnic Kinh while others have less than 50%.
All these factors make it obvious that you're from Quảng Ninh.
