My school is having an international night on March with international dances and international buffet. As the president of Vietnamese club, I need to organize a Vietnamese dance and a Vietnamese buffet. So which Viet food would you recommend me to have in this buffet?

Maybe Eggrolls, Springrolls, Bun Thit Nuong, Com chien duong chau / ga` . For dessert if possible -> che`dau trang, dau do, suong sa hot luu, sinh to mit/ sau rieng / bo . Quick, cheap and easy to make, can be done at home and brought to school for buffet.

Not trying to sterotype us , but eggrolls work fine for me most of the time. Some lettuce or salad will also be good.

I think egg roll is more associated with Chinese than with Vietnamese (besides our cha gio isn't exactly like the chinese egg roll that white people know of), so it's out of the list.

I like the dessert recommendation. They'd like che and sinh to, right?

spring rolls and xôi usually go well, if ur really keen make some gỏi chân gà ..chè or sinh tố are nice beverage , i say get some chôm chôm if its no biggie

oh I love Bo La Lop. You can make Chicken salad vietnamese style, Goi Bap Cai thit ga. It's kinda like cole slaw.

Any thing wrapped w/ white rice sheet, very Vietnamese.

I don't like goi

but it works well for buffets

Check the ad section in the local Vietnamese newspapers.
Call local Vietnamese temples, or Vietnamese elderly association for help.
Quick, simple, but pricey way is ordering from any Vietnamese restaurants - don't forget to ask for a discount.

Spring rolls is a general word, the real name is "les rouleaux imperial des Vietnamiens" or imperial Vietnamese rolls, always one of the favourite foods at any potluck meals. Fresh rolls (goi cuon), fried noodle, fried rice, and "goi tron", etc. are also suitable.
