i can name those which i consider delicacies..pho, bun rieu, bun bo hue, goi cuon, hu tieu..so much to choose from, google the names and they'll come up

i don't think those are delicacy, i mean food that are hard to make and doesn't always available. like in china, bird nest soup is consider a delicacy since its hard to find and is a unique dish. Does Vietnam have something in that manner.
