Onion. I'm addicted to onion, but you must cut it thick so that it would be crunchy. Also all those leaves in there too.

Do you put hoisin sauce in your pho along with the salt? because the sauce by itself already has like 1400mg's of sodium

so only pho and bun? I only like pho noodles, i dont know why but even though im a Hue, i can't eat bun bo hue, it tastes too oily and it goes down to like my throat when i chew it all the time, and it makes me wanna throw up, but pho noodles is good.
O yea, dont we have something that looks similar to chow mein. Like its yellow but really really thin compared to chow mein, and i think it tastes much much better than chow mein because it isnt oily like chow mein.
Have you ever ate that?

I've had Beef Pho with shrimp and chicken in it before, i thought it was unusual because I've never seen it served that way in any nha hang. Ate that kind of Pho at a friend of mine who is Cham muslim from Chau Doc in Vietnam. Could it be their own style?

Well I don't really know. I think they might serve it with chicken and shrimp in Vietnam. But I know they serve chicken pho here as well.
As for the Chams well most Vietnamese really don't know much about them since there are only around 100,000 left in Vietnam, most Chams actually live in Cambodia. I wonder what Cham people are like though?

a well prepared bowl of pho needs not to add anymore "nuoc mam" because the stock itself has been well seasoned. just add a teaspoon full of hoisin and red chilli sauce along with a fresh squeeze of lime wedge and a few slices of fresh chilli pepper plus all the herbs and bean sprouts.

A well-prepared, aromatic "phở" stock would be ruined by the addition of hoisin to the stock or any other additives. Why ? the preparation of "Phở" stock takes hours and hours to cook. The delicacy of it would be dramatically altered with any additives such as Hoisin sauce and the likes except for fresh red pepper, limes, bean sprouts, and herbs. But then again, if your bowl of phở doesn't suit you as is, then you should need to find a phở restaurant that can prepare as such. Remember not all phở places can carry the same phở stock as the way it should be. Even better if it is home-made 'cause you know you can always beef up to the sweetness of the stock.

what you had is not "pho" but "hu tieu" which is originated from the chams people. although the noodles look kinda alike but they are actually not the same. those noodles are called "hu tieu" which are used for "hu tieu soup" while pho noodles are used to "pho soup".
