Since there are so many food related topics, why not this one.
So, I do realize everyone loves Pho, if not most. I love it too.
However, "Bun Bo Hue" and "Banh Xeo" are my favorite. Hope I spelled them correctly.

Those two dishes are famous in the middle region.

Yes, you spelled them correctly/ If you want to get technical then it should be:
Bún Bò Huế and Bánh Xèo

So many people from Da Nang in here

I love bun bo hue, banh can, banh canh, banh uoc (the thin ones), bun mam nem, bun ca, bun thit nuong, che dau dang, che troi nuoc, che chuoi, xoi bap (my mom is trying to cook that, it's not available here

). Are they too much for favourites?

Food is always a fun topic to talk about. hehe. I can't pick a favorite dish either, but I have Vietnamese food everyday, and love it most. I'm actually a vegetarian, so my dishes are a little different, but I still enjoy the yummy food like pho, bun rieu, bun hue, banh xeo, banh canh, etc. The difference is, instead of meat, we replace our meals with tofu, bean-curd, and protein-rich 'soy-meats', and various beans and vegetables. The dish is still delicious, still has the Vietnamese style and flavor, and it is very nutritious as well.
I also like the simple food that my mom makes at home, like rice with canh chua thớm, or canh chua rau muống; rau muống or any vegetable luộc with chao and nước tương, and fried tofu; and many other dishes like mixed vegetables sào with tofu. As long as it is prepared well and we're hungry, any food can be delicious. =)
And when I eat at the restaurant, I usually like bun rieu and banh xeo. Oh and cà ri chấm bánh mì- especially the ones made by an elderly woman, are very yummy too. hehe.

In Vietnamese, Cao Lầu means "a multi-storey restaurant".

It's very good. One of my favorite dishes I had while in Vietnam. Very unique, since I have never had it or seen it in the US before.

It might be possible that it is derived from a Chinese dish. Hoanh Thanh = Wonton

It's a dish from Fokkian (Phúc Kiến) in China. There were a lot of Fokkianese in Vietnam. They were great travellers, and are everywhere (Macau, Singapore, but also all over SEAsia, Indonesia...), they were called "khách chú" (or "cắc chú" in South-VN) which means travellers or guests.

no. it was a straight orange sauce . there wasn't anything in it. arg. its gonna bother me. that sauce was hella good

i like all kinds of Bún.
Bún bò Huế, bún ốc, bún riêu, bún mọc, bún chả, bún thịt nướng...
Also hủ tíu Nam Vang, bánh canh, bánh xèo, bánh cuốn, bánh bột lọc, cơm sườn, chè, hột vịt lộn, v.v...yum yum yum.
